It’s the summer and i don’t know about you but we prefer to eat light. Especially if we have to be raving later on at night. Salads on the whole are boring meals with no real excitement, something which we can’t deal with. We love this fresh and spicy Thai Prawn Salad ( Yum Woon Sen), HDD fam Chonsak put us on this and its been a staple ever since.
Ingredients
1 bundles of cellophane noodles (mung bean noodles).
1/2 cup roasted peanuts
1 cup of chicken broth
1 pound of fresh peeled prawns
2 large fresh and juicy limes
3-4 tbsp fish sauce
½ of medium size red onion
½ bunch of cilantro
1 stalk of celery
Step 1. Slice the onion and celery into small bite size pieces.
Step 2. In a bowl soak the noodles for 8 minutes in warm chicken broth.
Step 3. Fry the peanuts in a frying pan until crunchy (2 minutes max)
Step 4. Cut the noodles into 4 inch strips with a pair of scissors.
Step 5. Juice the limes and add the fish sauce and add half of the coriander to form the dressing.
Step 6. Fry the prawns until cooked then add them to the dressing.
Step 7. Combine all ingredients in a lagre bowl starting with the noodles then the celery and onion and finishing with the dressing.
Step 8. Make sure to mix evenly, then add the peanuts and mix again.
